Is it possible to create a video capture of the device screen?
The goal is the same as http://developer.anscamobile.com/reference/index/displaycapturescreen but with video.

I believe some of the Photo & Video processing apps work in a method like this. I think the very original version of Qik did as well.

Are there any apps that do this at present on the app store? I'm nearly sure apple don't allow it, and saw jailbreak apps that offered the equivalent.
Would like to be wrong however

What about Talking Tom, where you can record a video (MP4 file) and post it to facebook or send it to an email address?

There are tons of apps in the app store that allows you to record a video...
Not with video.
